Cheddars 

As cheddar ages, its texture, flavor and performance change. Medium Cheddar has a texture that is creamier than mild, with a fuller flavor often described as "brothy".

Aged cheddar has a texture both crumbly and creamy, with a flavor often describerd as "beefy".

Aging adds a complexity to cheddar rather than sharpness, so a 15 year old cheddar may be milder than a one year old sharp cheddar - and so much more rewarding.
