Foenegreek is a plant, native to the middle-east that is used extensively in Indian cooking including ground in curries. When raw it has a bitter taste and is used in the Arab world as an antacid. When cooked it has a very unexpected and delightful taste of maple. This ingredient, added to the Gouda, has won it the Best Flavored Gouda in the U.S. award.
