How can one cheese be so special? It starts with the cows. From a single mixed herd, raised on the farm, only milk from May to October is used in Pleasant Ridge Reserve. That is when the cow’s are eating grass from their pastures just outside the dairy facility. Twice daily the milk is pumped into production from the milking parlor to produce this Alpine style cheese, similar to a Gruyere.
In wine making, estate bottled wines are the benchmark. Pleasant Ridge Reserve is the “estate” cheese of North America.
