Of all the recognized cheese varieties in the world, all but two come from the old-world (the other two are from Wisconsin of course). Gouda is a city if the Netherlands, down the road from Edam. Goudas are rich in flavor with a smooth texture. They have exceptional melting qualities. “Vintage” not only rhymes with “Vincent” it indicates that this Gouda is aged for 6 months. And, as was common with its namesake, it is a work of art.
