Mixed milk cheeses are complex by their nature. Airco has the signature undertones of each of the milks used to make it and then there is a surprise – it is lightly smoked over apple-wood. The creamy, semi-soft texture allows this cheese to literally melt in your mouth. It makes the perfect addition to a cheese course, near the middle, with it’s mild and subtle flavor profile.
